What's it called?
Rice vinegar, rice wine vinegar, clear rice vinegar, rice vinegar, Chinese vinegar, Micu (米醋), Japanese vinegar.
What is it?
A mild type of vinegar made from fermented glutinous rice and water. As the photo to see sometimes entirely colorless, sometimes a very pale yellow. It depends on the rice that is used (polished or unpolished) or perhaps to the additions. In Japanese rijstazijnen is often wheat or sake.
How to use?
To be used as one of ordinary vinegar. The taste is quite similar to white wine vinegar. You would be able to replace one with another. This is the vinegar that (along with sugar, salt and mirin ) by sushi rice goes.

Which is preferred?
The Chinese rice vinegar seems neutral and slightly softer in taste than Japanese. But also less complex.











At the supermarket on the beachfront in Amsterdam last week I bought King vinegair white rice. Is that a good or a copycat?
I have no idea. Never heard of google and also helps me no further. Copycats who generally have no Dutch names. I would say, if he feels good is good. There is not much fault to do with vinegar, vinegar's just cheap vinegar, only less beautiful / delicious. But no mess or nepzooi. I think.
I also have mistaken the name. Konig is called.
