Japchae (Koreaanse noedelsalade)

Japchae, Koreaanse zoete aardappel noedel salade
Een klassieker uit de Koreaanse keuken, erg populair bij westerlingen en ik snap wel waarom: de sweet potato noodles zijn heerlijk verkoelend en niet melig, de dressing lekker zoet, zout en notig van de suiker, sojasaus en sesamolie. Echt een aanrader.


RECEPT
voor 4 personen

De shii-takes
4 gedroogde shii-takes
Laat de shiitakes minstens 30 minuten maar liefst veel langer weken in kokendheet water. Knijp ze daarna uit, snij om het steeltje heen in reepjes. (gooi het steeltje weg)

De noodles
250g dangmyun
Bereid de noodles volgens de gebruiksaanwijzing, spoel ze koud af, meng met een theelepeltje sesamolie en zet koud weg.

De biefstuk
275g biefstuk
2 teentjes knoflook
2 el sojasaus
1 el sesamolie
1 tl suiker
2 tl mirin
Snijd de biefstuk in dunne reepjes en laat samen met de shii-take reepjes 20 minuten of langer marineren

De omelet
2 eieren
Klop de eieren los met een snufje zout en bak er in een koekenpan op matig vuur een dunne omelet van. Rol op en snijd die in dunne plakjes/sliertjes.

De groenten
1-3 wortels
100g spinazie
2 bos-uien
Blancheer de spinazie in 1 minuutje in kokend water, spoel koud af, knijp goed uit en breng op smaak met een snufje zout en wat sesamolie.
Snijd de wortel en de lente-ui in julienne reepjes. (2×2 mm)
(Puntpaprika is ook lekker als je die in huis hebt)

Het groentensausje
2 el sojasaus
1 el suiker
1 teentje knoflook, geperst

Het wokken
Bak het biefstuk & shii-take mengsel kort op niet te hoog vuur. Haal het mengsel even uit de pan en bak nu het groentenmengsel in dezelfde pan. Voeg het groenten-sausje toe en laat even sudderen en indikken. Als de groentenreepjes enigzins gaar en bruin zijn doe je de biefstuk & shiitake er weer bij. Besprenkel met wat druppeltjes sesamolie.

De assemblage
Meng de koude noedels met het vlees-shiitake-groentenprutje.
Leg de omeletreepjes erop.
Garneer met wat geroosterde sesamzaadjes.
(of die kant-en-klare zwarte sesamzaadjes met een rooksmaakje)

Tip: die vierkantige, geplakte biefstukjes uit de diepvries van de supermarkt zijn zeer geschikt om mee te wokken. Niet taai en makkelijk in uniforme reepjes te snijden. Zeker als ze nog een klein beetje bevroren zijn. Altijd handig om op voorraad te hebben.

  1. I am surprised to hear that koreans also have this dish. This looks uncanningly similar to the chinese version of “Chap Chye” or 杂菜 meaning mixed vegetables. I think you call it “Tjap Tjoy” in Netherland. This “Chap Chye” dish is very popular especially among chinese in Southeast Asia, particularly in Singapore and Malaysia. It consists of mainly cabbage, carrots, dried shitake mushrooms, dried lily buds, black fungus (wood ear), fatt choy (black moss) and tung hoon (glass noodles).

  2. Japchae, in Korean means the same: “mixture of vegetables”
    jap / 잡 / 雜 = “mixed and stirred” and
    chae / 채 / 菜 = “vegetables”

    Jap Chae has its own wiki-page where it says the origin of this Korean salad goes back to the early 17th century. But of course, you still can’t tell who was first and who influenced who. ;-)

    In the Netherlands everybody is familiar with Tjap Tjoy, but I don’t think it’s ever served with glass noodles. Just the mixed vegetabels. So I didn’t make the connection. Thanks for pointing that out. Fun to know these kind of things.

  3. Hihi, that’s definitely not like any tjap tsjoi served in Chinese restaurants in the Netherlands. Tjap tjoy here is something like carrot, celery, broccoli, onion stir-fried and then covered with a chicken-stock with cornflour coating. Sometimes prawns are added or pork.

    Than nyonya chap chye looks interesting, but not very much like the Korean Jap Chae, does it?

  4. Hmmn…the tjap tjoy in Netherlands sounds more like the malay or indonesian version of chap chye, I think they call it sayur campur. Or maybe because they couldn’t get typical chinese ingredients like dried lily buds, black fungus and fatt choy. Fatt choy (black moss) in particular looks quite scary and may put off western customers, in fact I think it looks like human hair ;p. Fatt choy is added because it sounds like “fa cai” which means prosperity, and hence chap chye is typically served during Chinese New Year.
    The Korean Jap Chae, in terms of proportion, consists more of beef and glass noodles, than vegetables. :)

  5. Photos on google for sayur campur certainly look like “our tjap tjoy”. Don’t forget, there’s a chinese-indonesian restaurant in almost every little place in the Netherlands and when they have “Chinese vegetables” on their menu it hardly ever is chinese vegetables, just dutch vegetables, stir-fried with this cornflour coating. Not bad, but not great either and certainly nothing authentic.

    The more authentic ingredients you list weren’t even available when tjap tjoy conquered our nation. ;-)

  6. In fact, I was very shocked when I first went to a chinese restaurant in Belgium and saw that their menu contains mostly indonesian/ malay terms for their dishes. For eg, fried rice instead of being called chao fan, is called nasi goreng, and fried noodles is called mee goreng. Luckily I am from Singapore and I know enough malay to get by. Imagine a chinese from China, Taiwan or HK, they wouldn’t understand a single dish from the menu. :)

    Ik ben gisteren naar een thaise winkel in Chinatown Antwerpen geweest, en ik heb toevallig een pakket Gedroogde Mix Groenten (Assorted Vegetable Mix) ontdekt in de winkel. De pakket is heel handig en bevat alle ingredienten die je chineze chap chye kan koken. Het kost slechts 2 euro, en is geimporteerd door een bedrijf in Rotterdam. Als je wil, kan ik je een foto via e-mail sturen zodat je kan zien wat het eigenlijk is :)

  8. Mijn advies is om alles mooi apart te garen en pas op het laatst alles snel bij elkaar te mengen zodat het geen zompig geheel wordt. En goed je best doen om alles in fijne reepjes te snijden. Dat is toch het lekkerst, bovendien mengt dat ook makkelijker met de noedels.

  9. Wat een lekker recept! Ook dank van mijn lief, die had er net dertig kilometer fietsen op zitten en heeft er twee enorme kommen vol van weggeslurpt. :)

  10. Goed te horen. Leuk! Ze doen het ook lekker in de soep. Worden niet zo melig als euh andere noodles.
